Zubereitung<\/p>\n

Die Rehkeule waschen, trocken tupfen, salzen und pfeffern. Die Wacholderbeeren mit den Pfeffer- und Pimentk\u00f6rnern im M\u00f6rser fein zerreiben, die Rehkeule damit einreiben.<\/p>\n

In einem Br\u00e4ter in hei\u00dfem Butterschmalz rundherum anbraten. Zwiebel abziehen, Karotten putzen und sch\u00e4len, beides fein w\u00fcrfeln, zum Fleisch geben und kurz mitbraten. Tomatenmark einr\u00fchren, kurz anr\u00f6sten. Backpflaumen fein w\u00fcrfeln und dazugeben. Mit Rotwein abl\u00f6schen und mit Wildfond auff\u00fcllen. Zudecken und im vorgeheizten Backofen bei 200 (Umluft 180) Grad ca. 1,5 Stunden schmoren.<\/p>\n

Die Rehkeule aus dem Bratenfond nehmen und warm stellen. Den Bratenfond durch ein Sieb streichen, Portwein unterr\u00fchren, die Sauce nochmals aufkochen lassen und mit anger\u00fchrter Speisest\u00e4rke leicht binden. Salzen, pfeffern und die Cr\u00e8me fra\u00eeche unterr\u00fchren.<\/p>\n

Die Rehkeule in Scheiben schneiden und mit der Sauce auf vorgew\u00e4rmten Tellern servieren.<\/p>\n

Buttergem\u00fcse oder Rotkohl, Sp\u00e4tzle oder Kl\u00f6\u00dfe und mit Preiselbeerkompott gef\u00fcllte Birnenh\u00e4lften dazu reichen.<\/p>\n","protected":false},"excerpt":{"rendered":"
