\n5 EL \u00d6l, neutrales
\n2 EL Mehl
\n2 TL Zucker
\nSalz und Pfeffer, schwarzer, frisch gemahlen
\n315 ml Wei\u00dfwein, trockener
\n1 Liter Gem\u00fcsebr\u00fche, kr\u00e4ftige
\n50 g Butter
\n5 Scheibe\/n Baguette(s) oder Toastbrot
\n8 EL Gruy\u00e8re, geriebener
\n4 Msp. Paprikapulver, edels\u00fc\u00dfes<\/p>\n

Zubereitung<\/p>\n

Die Zwiebeln sch\u00e4len und in feine Ringe schneiden – so das Original. Die Suppe l\u00e4sst sich teilweise allerdings sehr schwierig l\u00f6ffeln, so dass es sich anbietet, die Zwiebeln zu halbieren oder zu vierteln und dann erst in feine Ringe zu schneiden oder zu hobeln.<\/p>\n

Das \u00d6l in einem gro\u00dfen Topf erhitzen und die Zwiebeln darin glasig braten, bis gut der Zwiebelsaft ausgetreten ist. Die Zwiebeln mit dem Mehl best\u00e4uben, mit Zucker, Salz und Pfeffer w\u00fcrzen und gr\u00fcndlich vermischen. Nach und nach erst mit dem Wein und dann mit der Br\u00fche aufgie\u00dfen und 15 Minuten mit leicht ge\u00f6ffnetem Deckel k\u00f6cheln lassen.<\/p>\n

W\u00e4hrenddessen die Butter in einer Pfanne erhitzen und die Brotscheiben darin knusprig braun braten. Auch hier gilt: Wer es leichter zu essen haben m\u00f6chte, sollte das Baguette etwas kleiner schneiden. Aber im Original kommen ganze Scheiben drauf. Diese schwimmen nat\u00fcrlich auch besser.<\/p>\n

Die Zwiebelsuppe in Sch\u00e4lchen f\u00fcllen, die Baguettescheiben auf die Zwiebelsuppe legen, mit K\u00e4se und Paprikapulver bestreuen.<\/p>\n
