Zucchini gut waschen und halbieren. Die Zucchinih\u00e4lften nochmal halbieren. Die St\u00fccke nun in ein Sieb geben und salzen.
\nMindestens eine halbe Stunde ruhen lassen und danach mit einem Papiertuch gut trocken tupfen. Um im Ofen knusprig gebacken werden zu k\u00f6nnen, muss sie wirklich trocken sein.
\nDie St\u00fccke jeweils mit \u00d6l bestreichen und panieren: 1. in einer Mischung aus Mehl, Parmesan und Gew\u00fcrzen w\u00e4lzen, 2. durch das mit 2 EL Wasser verquirlte Eiwei\u00df ziehen, 3. in Paniermehl w\u00e4lzen.
